LOBOS Meat & Tapas is an exciting new ‘garito’ (Spanish neighbourhood joint) situated right next to Borough Market.
Meaning ‘wolves’ in Spanish, LOBOS is a carnivores’ paradise, focusing on the prime cuts of Iberico pig, milk-fed Castillan lamb & beef from The Ginger Pig alongside a short, classic selection of authentic tapas, sourced from the neighbouring market.
Veggies, look away now! We can’t wait to try braised pork cheeks with mash and horseradish, slow cooked pork belly marinated in pomegranate molasses with carrots and parsnips, herb crusted lamb rack with parsley, mint, thyme & rosemary and the Lobo bun (marinated pork patty with onion, peppers, candy bacon topped with a fried egg).
The team work closely with the Borough Market traders and the tapas will change frequently depending on what is available and in season.
The classic selection includes Martini olives (martini and herb stuffed olives), Octopus vinaigrette, Cazon en adobo (deep-fried marinated dogfish), Arroz con costra (chicken, chorizo and saffron rice with an egg crust), Migas (Bacon, fried eggs and breadcrumbs) and Baked Tetilla cheese with roasted vegetables and brandy.
The short dessert list includes Dulche de leche cheesecake, Double chocolate and pistachio cake and Lemon panna cotta with Amaretto strawberries.
