Last night we were treated to a beautiful vegan feast by those lovely folk at Mr. Organic. We enjoyed ourselves so much that we wanted to share some of the scrumptious recipes with you to recreate at home. We think veggies, vegans and meat-eaters alike will all be impressed with these Organic, Vegan recipes. Gather the gang and get cooking!
Starter – Tomato & Olive Bruschetta
Serves 4-6
- 1 loaf baguette, sliced diagonally
- 8 large plum tomatoes, chopped and drained
- 2-3 cloves garlic, crushed
- 1 bunch fresh basil
- Mr. Organic extra virgin olive oil
- Mr. Organic tomato & olive add in sauce
- sea salt & black pepper to taste
- In a large bowl, mix the tomatoes, garlic and basil. Add balsamic vinegar and extra virgin olive oil. Add sea salt and black pepper to taste, mix until combined. Cover and set aside in the fridge for at least an hour.
- Slice the baguette diagonally into thick slices. Drizzle both sides lightly with olive oil and toast in the oven until golden brown.
- Spoon the mixture onto warm slices of bread & serve immediately.
Main – Vegan Avocado Pesto Pasta
Serves 6
- 500g Mr. Organic tagliatelle pasta
- 1 bunch fresh basil
- 2 large ripe avocados
- 2 lemons
- 3 cloves garlic
- 125ml Mr. Organic extra virgin olive oil
- 70g pine nuts
- sea salt & black pepper
- 1 jar Mr. Organic basil pesto
- Boil a large pot of heavily salted water and add linguine. Cook until al dente, drain and set aside.
- To make the pesto, blend basil, pine nuts, avocados, lemon juice, garlic, and oil in a food processor until smooth. Blend in jar of basil pesto for extra flavour. Add salt and pepper to taste.
- Stir pasta and pesto together, garnish with fresh basil & serve.
Side – Chilli Garlic Bean Salad
serves 3-4
- 2 cans Mr. Organic mixed beans
- 1 jar Mr. Organic chilli garlic pesto
- sea salt & black pepper
- Drain & rinse mixed beans using a sieve.
- Stir in chilli garlic pesto. Season with extra salt & pepper if necessary.
- Allow to rest in the fridge for at least an hour. serve cold or room temperature.
Dessert – Vegan Chocolate Hazelnut Pastries
serves 6
- 500g pack jus rol puff pastry
- 1 jar Mr. Organic free from chocolate hazelnut spread
- 100g hazelnuts, finely chopped
- Preheat oven to 200C. Line a baking sheet with greaseproof paper.
- Spread out puff pastry on a work surface sprinkled with flour. cut the pastry to create 12 squares.
- Add a teaspoon of chocolate hazelnut spread to the center of each square of pastry. Wet fingers with water and fold pastry over, sealing by pinching the sides together.
Place on prepared baking sheet. sprinkle over finely chopped hazelnuts. bake 9-12 minutes, or until the tops are golden.
