We first discovered the Mindful Chef concept when we reviewed their healthy cookbook for The Independent. Awarding it our Indy Best Buy, we fell for their easy to prepare, quick to make, nutritious meals and were therefore keen to try out their recipe boxes, putting all of that into practice.
Our box was delivered on Sunday morning (pretty much the only time you’re guaranteed to find us at home, so ideal!) and contained two meals for two people. There’s also the option of three meals but the smaller one suited us perfectly as we’re hardly ever at home to cook and we just HATE to waste food.
At the start you’re asked what your goals are. Want to eat less carbs? Discover exciting recipes or just save time? Tick as many or as little as you like. We skipped this to keep our options open.
We went for a balanced box but you can tailor everything to your diet – go pesci, protein packed or plant-based and select any food group you want to avoid. Don’t eat pork for example? No problem. However all meat is 100% grass-fed British and fish is sustainably sourced if you do choose too.
There are a whopping 12 new recipes a week to choice from, so you’re unlikely to struggle to pick something delicious. We ended up with Scandi-style lentils with roasted beetroot and coconut yoghurt. Half way through demolishing it we remembered that it was vegan too – bonus. Filling, packed full of flavour thanks to the interesting use of ingredients – dill spiked coconut yoghurt anyone? And best of all, portions were large enough for us to take a pack up of leftovers to work the next day – hurrah! Next week we’re looking forward to a mindful burger with poached egg and parsnip fries.
We loved our sample box so much we looked into signing up for real. If you go for two vegan recipes for two people, it will only set you back £22. Bearing in mind we can’t seem to walk into a supermarket without spending at least a tenner, we think this is great value. Just think – that’s two nights that you can just come home and whip up an exciting new recipe without even thinking about it. Not only will it keep us on our mission to try and eat more plant-based meals (to counter-balance all the decadence when we go out!) but it frees up time to go to the gym on the way home (as you don’t need to stop at the shops), knowing that when we get in, we’re just 25 mins away from a healthy meal.
