After a sell-out run, Pilgrim is back for six dates only! A totally new six course feast has been designed for the new run, alongside the all-important wine pairing.
Inspired by the Camino de Santiago, a pilgrimage that has been made since the 9th century to Santiago de Compostela in Galicia, Pilgrim will take you on a journey with each course telling a story. Founder Jamie J Duffield walked the Camino earlier this year and was inspired by the diversity of each region, as well as the quality local produce he uncovered along the route. On his return, he journeyed back to Spain with the two head chefs for a week-long research trip. Tough gig.
Pilgrim focuses on meat and seafood and aims to serve regional dishes with a contemporary twist. A combination of the finest Spanish ingredients and UK farmers, butchers and fishmongers, key dishes on the menu include a charcoal talo with Iberico pork short rib and a play on Galicia’s famous dish “Pulpo al feria” (literally meaning “fair-style octopus”). The menu culminates in a reimagined “Torta de Santiago” an almond dessert rooted in the history of the Camino. Wines have been selected from XECO Wines, a brand of dry sherry wines which have been crafted by three friends to bring sherry back to the forefront of people’s minds. With so much preparation having gone into Pilgrim, you can be sure the menu on offer will be top class!
