Coya’s executive Head Chef, Sanjay Dwivedi, has created a special four-course menu, designed to be expertly paired with a Casamigos Tequila cocktail and flight. Coya showcases the best of Latin American food, drink and culture, combining traditional elements of Peruvian cuisine with modern British, seasonal ingredients.
Coya’s offering has then been perfectly paired with Casamigos’ ultra-premium, small batch tequila range, founded by longtime friends George Clooney, Rande Gerber and Michael Meldman. Casamigos Tequila is named after Clooney and Gerber’s houses in Mexico, and roughly translates to “house of friends” – perfectly complimenting the convivial, Latin American spirit and ethos of Coya.
The carefully curated menu strikes a balance between the contemporary and classic. The first course introduces Lubina Clasico (sea bass with red onions, sweet potato and white corn) and Tiradito de Cobia (cobia with edamame, baby gem and ponzu) and comes paired with a refreshing Maya-Huel cocktail, comprising Casamigos Reposado with pomegranate, mint, lemon maraschino, fresh lime juice and agave syrup. The second course then includes Calamares Fritos con Ocopa (fried baby squid with Peruvian marigold and quinoa) and Tartare de Atun (tuna tartare with spring onions, radish, wasabi mayonnaise and katsuobushi), served with Casamigos Blanco.
The main courses are Bife de Chorizo (Josper grilled sirloin, chimichurri and tamarind salsa) and Arroz Nikkei (Chilean sea bass with rice, lime and chilli), both paired with Casamigos Reposado. Casamigos Añejo is served alongside Coya’s specially created Caramelo con Chocolate y Tequila (chocolate ganache, Casamigos Añejo and mango), which complements its rich, warm flavours.
The Casamigos tasting menu at Coya is priced at £75 per person and includes four courses, a cocktail on arrival, and paired tequila flight of 3 tequilas.
